Asian-Inspired Ramen Salad
Servings: 12
Ingredients:
- ¾ Cup Pecans, roughly chopped
- 2 packs Ramen, seasoning packet discarded and broken into bits
- 1 TBSP Butter
- 3 Heads of Romaine Lettuce, chopped
- 8 oz Broccoli Florets, chopped
- 8 stalks green onions, trimmed and finely chopped
Dressing:
- ¼ Cup Red Wine Vinegar
- 2 TBSP Soy Sauce
- ½ Cup Sugar
- *¾ Cup Neutral Oil
- *Avocado or grapeseed oils are great for this dressing.
Instructions
Step 1:
Break up the ramen into small bits while still inside package. In a skillet over medium-heat, saute ramen and pecans in the butter until ramen slightly browns. Be careful not to burn.
Step 2:
In a large salad bowl, toss lettuce, broccoli and green onions.
Step 3:
Right before serving, add pecans, ramen and half of the dressing.
Step 4:
The remaining dressing can be added by guests to their liking.
