20 Minute Lasagna Soup

Ingredients

  • 1 lb ground Pork
  • 1lb Ground Beef
  • 2TBSP Little Eataly
  • *1 Onion, Small Diced
  • 1 28 oz. Can Crushed Tomatoes
  • **1 Cup Red Wine
  • 6 Cups Chicken Stock (32 oz carton + 2 Cups)
  • 6 Broken Lasagna Noodles
  • 2 Cups Shredded Mozzarella
  • 1 Cup Parmesan Cheese (Optional)

Instructions

Instruction: 

Step 1: 

Brown meat over high heat & drain extra fat.

Step 2: 

Add onion, if using, and cook until translucent.

Step 3: 

Add 1 TBSP of Little Eataly.

Step 4: 

Add crushed tomatoes and wine. Simmer on medium-high heat for 3-4 minutes.

Step 5: 

Add chicken stock, pasta and remaining Little Eataly Seasoning Blend.

Step 6: 

Bring to a boil, then partially cover with lid and simmer on high for about 12

minutes or until pasta is tender.

Step 7: 

Serve with fresh mozzarella on top & crusty bread on the side.
