Asian-Inspired Noodle Soup
Servings: 6
Ingredients:
- 1 Bunch Green Onions, whites & greens separated
- *2 Small Bok Choy, trimmed and cut into strips
- 2 tsp Vegetable Oil
- 5 Cups Chicken Stock
- 3 TBSP Soy Sauce
- 2 TBSP Mirin
- 2 tsp Sesame Oil
- 1 TBSP Wok This Way
- 1 Cup Shredded Chicken
- 5 oz Chinese Noodles,cooked separately in other pot
Optional: Sriracha for garnish
Notes* Trim off the bottom of bok choy (about 1 inch). Medium dice the firmer white part and cut the leaves into strips.
Instructions
Step 1:
In a soup pot over medium heat, sauté the white parts of bok choy and green onions in vegetable oil for about 2 minutes.
Step 2:
Add chicken broth, soy sauce, mirin, sesame oil & 1 TBSP Wok This Way and bring to a boil.
Step 3:
Season shredded chicken with 1 tsp Wok This Way Seasoning Blend.
Step 4:
Lower heat slightly and high simmer for about 8 minutes (gentle bubbling).
Step 5:
Add chicken, green leafy parts of bok choy and noodles and shut off heat.
Step 6:
Ladle into bowls immediately and top with green parts of green onions and a little Sriracha for added heat.
