BBQ Cheddar Mini Meatloaves

Servings: 4-6

Ingredients:

For the meatloaves:

  • 2 lbs ground turkey or ground beef
  • ½ white onion, finely chopped
  • 2 tablespoons Steak it Easy
  • 2 teaspoons Dijon mustard
  • 1 egg, beaten
  • 2 tablespoons almond flour
  • ½ cup shredded cheddar cheese
  • 12 tablespoons BBQ sauce of your choice, I use Rudy’s or Franklin’s
  • 2 tablespoons chopped fresh parsley, plus more for garnish

For the veggies:

  • 1 12oz bag green beans
  • 3 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 tablespoon Steak it Easy
BBQ Cheddar Mini Meatloaves

Instructions

Step 1:
Preheat the oven to 400 degrees fahrenheit.

Step 2:

Line a large baking sheet with parchment paper for easy clean up.

In a large bowl, toss the green beans and cubed sweet potatoes in olive oil and Steak it Easy seasoning.

Step 3:

Spread the vegetables on the tray.

Step 4:

Place on a lower rack in the oven and bake for about 30-35 minutes, until the sweet potatoes are cooked through.

Step 5:

Form the meatloaves.

Step 6:

In a large bowl, mix the turkey or beef, onion, Steak it Easy seasoning, mustard, egg and 2 tablespoons of barbecue sauce. Mix until combined. Add the almond flour, cheese and parsley. 

Step 7:

Mix again to combine. Divide the mixture into 6 equal portions and form into mini loaves. 

Step 8:

Line another baking sheet with parchment paper for easy cleaning. Set a cooling rack or grate on top of the baking sheet (this helps the fat drain off of the meat while cooking). Brush each loaf with 2 tbsp barbeque sauce. Place on the middle rack in the oven and bake for 20-25 minutes, until the internal temperature reaches 165 degrees. 

Step 9:

Serve with the roasted vegetables.
