Cajun Cod Cooked in “Envelopes”

Ingredients:
- 2 lbs Fresh Cod, cut into thirds
- 3 Yukon Gold Potatoes, peeled and sliced as thinly as possible
- 1⁄2 lb Fresh Green Beans
- 1 Medium Onion, sliced as thinly as possible
- *2 TBSP Lou-Easy-Ana Seasonings
- **1 1⁄2 tsp Kosher Salt
- 6 TBSP Butter
- 12 sheets of aluminum foil approximately 8” in width.

Notes* You will need 1⁄2 tsp of Lou-Easy-Ana Seasoning per “envelope”.**Add 1⁄4 tsp Kosher Salt to each packet of vegetables.
Instructions
Step 1:
Preheat oven to 400 degrees F.
Step 2:
For the vegetables, lay 8 slices of potato in the center of an aluminum foil sheet.
Step 3:
Top with 6-8 green beans and a few slices of onions. Season with 1⁄2 tsp Lou-Easy-Ana., 1⁄4 tsp Kosher Salt and top with 1⁄2 TBSP butter. Fold in edges of foil to form envelopes. Watch this tutorial.
Step 4:
Place packets on a sheet pan and cook in oven for total time of about 22-26 minutes, depending on how tender you like your green beans.
Step 5:
For the fish, place filet in the center of aluminum foil sheet. Top with 1⁄2 TBSP Butter and 1⁄2 tsp Lou- Easy-Ana Seasoning Blend. Seal into envelopes and add to oven with the vegetables but cook fish ONLY 10-12 Minutes or until flaky and pale white.
Step 6:
To serve, open vegetable packets and slide fish on top of vegetables. Serve immediately.
