Chicken Fajitas
Serving: 6-8
Ingredients:
Marinade
- 1 cup pineapple juice
- 1⁄4 cup cup soy sauce
- 1⁄2 cup olive oil
- 2 Tablespoon Latin Nights Seasoning
Fajitas
- 2 lbs Chicken Breasts, halved length-wise
- 1 TBSP Avocado Oil
- 1 Onion, sliced thinly
- 1 Green Bell Pepper, sliced thinly
- 1⁄2 Tablespoon Latin Nights Seasoning
Fajita Fixings:
- Tortillas
- Cheese
- Sour
- cream and pico de gallo!
Instructions
Step 1:
Mix ingredients in a glass bowl and stir. Add chicken and marinade for 30 minutes to 4 hours. *any longer and acid starts to denature protein.
Step 2:
Heat skillet on high. Add breast and cook for 5 minutes on each side or until cooked through. Set chicken aside and tent with foil.
Step 3:
Over medium heat, add oil, onions, bell peppers and 1 tsp salt. Cook until softened.
Step 4:
Slice chicken and serve over vegetables.
Step 5:
Serve with tortillas, cheese, sour cream and pico de gallo!
