Creamy Ranch Pasta
Servings: 4-6
Ingredients:
- 6 Strips Bacon
- *4 Chicken Cutlets
- ½ tsp Kosher Salt
- 8 oz Rotini
- 6 oz Cream Cheese (¾ of a 8 oz block), room temperature
- 2 TBSP Ranch-Hand Seasoning Blend
- 2 Cups Starchy Pasta Water
- 2 cups Mozzarella Cheese
Notes* *If using whole breasts, cut in half horizontally.
Instructions
Step 1:
Pat chicken dry and season with salt. Set aside. Bring salted water to a boil and start boiling pasta according to package directions.
Step 2:
In a skillet, render the fat from the bacon until it is crispy. Remove bacon from heat and set aside.
Step 3:
Drain the oil from the pan into a cup and wipe down the skillet.
Step 4:
Using about 1 TBSP of bacon drippings, brown the chicken over high heat for 3-4 minutes on each side until just cooked. Remove from heat, cube and set aside.
Step 5:
Before draining pasta, be sure to reserve 2 cups of starchy pasta water.
Step 6:
In same skillet, add hot pasta water and cream cheese, whisking until smooth.
Step 7:
Add Ranch-Hand Seasoning and stir throughout.
Step 8:
Add pasta, diced chicken and mozzarella cheese.
Step 9:
Shut off heat and top with bacon and stir the bacon throughout until cheese has melted.
Step 10:
Serve immediately.
