Curried Beef and Potatoes
Servings: 6
Ingredients:
- 1 lb Lean Ground Beef
- 1 Onion, small-diced
- 1 tsp Kosher Salt
- *1 tsp Ginger Paste
- 1 tsp Chipotle Adobo Sauce
- 1 14 oz Can Diced Tomatoes, undrained
- 2 Large Russets, peeled & Medium-Diced
- 1 Cup Frozen Peas
- 1 ½ Cups Chicken Stock
- 2 TBSP Suburban Curry
- 2 TBSP Cilantro, minced
Optional: Pita bread
Notes* You can find Chipotle Adobo Sauce in the Latin American section of your grocery store.
Instructions
Step 1:
In a large skillet, brown meat while breaking it apart.
Step 2:
Add onion and 1 tsp kosher salt and sauté until translucent.
Step 3:
Add ginger paste, diced chipotle peppers, potatoes, diced tomatoes and chicken stock
Step 4:
Season with 2 TBSP Suburban Curry Seasoning Blend.
Step 5:
Bring to a quick boil and then cover and simmer for about 15 minutes or until potatoes are tender.
Step 6:
Add peas and cilantro and cook for an additional 10 minutes uncovered.
Step 7:
Ladle in a bowl with a side of pita bread.
