Easy Taco Soup
Servings: 6
Ingredients:
- 2 lbs 93% Lean Ground Beef
- 1 Onion, small-diced
- 1 jalapeno, small-diced & seeded
- 2 tsp Kosher Salt
- 2 TBSP Latin Nights (Divided)
- *1 Can Petite Diced Tomatoes
- 1 Cup Frozen Corn (or 1 Can Corn)
- 1 Can Black Beans, undrained
- 1 quart Chicken Stock (4 cups)
Garnish:
- Shredded Cheese
- Diced Avocado

Notes* Mexican-Style Diced tomatoes are best
Instructions
Step 1:
In a soup pot, brown the meat.
Step 2:
Add onions and peppers and sauté until onion is translucent.
Step 3:
Add kosher salt and 2 TBSP Latin Nights.
Step 4:
Add diced tomatoes, beans and corn. Stir throughout. Add chicken stock.
Step 5:
Bring to a boil.
Step 6:
Cover and simmer for 20 minutes.
Step 7:
Serve immediately and garnish with cheese and diced avocado.
