Green Chile Pork
Servings: 6
Ingredients:
- 2 lbs pork cut into 1in cubes (we used pork loin)
2 cups onion, chopped
1 cup Poblano pepper
1 Tbsp minced garlic
3 cans diced green chiles
2 tbsp Latin Nights
2-3 cups chicken stock, enough to cover the pork.

Notes* For a deeper green chile flavor, add in 2tbsp green chile powder when you add in the Latin Nights seasoning. I like to use Savory Spice Hatch Green Chile powder.
Instructions
Step 1:
Sauté peppers & onions until soft.
Step 2:
Add in garlic & 1tbsp Latin Nights and let cook 2-3 mins.
Step 3:
Once fragrant, add in pork, green chiles & additional 1tbsp Latin Nights and stir.
Step 4:
Pour in stock, enough to cover the meat and vegetables.
Step 5:
Bring to a boil, cover and reduce heat to a simmer for 1.5 hours (pork should be fork tender).
Two ways to serve:
As a chili, top with your favorite toppings including avocado, diced red onion, sour cream, Monterrey jack cheese, chopped jalapeños, cilantro.
As tacos- warm fresh corn or flour tortillas on a skillet and add the pork and toppings of your choice.
