Green Pozole
Servings: 6
Ingredients:
- 3 TBSP Olive Oil
- 8 large or 12 small Tomatillos, halved
- 1 onion, large diced
- 1 poblano, large diced, deseeded
- 1 tsp Kosher Salt
- 1 Rotisserie Chicken, no skin, shredded
- 1 15 oz Can White Hominy, drained
- 1 1/2 Boxed Chicken Stock (48 oz)
- *3 TBSP Latin Nights Seasoning Blend
- 1⁄2 Bunch Cilantro, minced
Garnishes:
- Cilantro
- Tortilla Chips
- Sliced
- Avocados
Notes* Add 1 TBSP Latin Nights Seasoning Blend to shredded chicken.
Instructions
Step 1:
Preheat oven to 425 degrees F.
Step 2:
Toss first 5 ingredients and roast for 30 minutes.
Step 3:
Run cooked vegetables through food processor until smooth.
Step 4:
Add to soup pot & simmer for 10 minutes.
Step 5:
Add chicken, hominy, stock and 2 TBSP Latin Nights & bring to a quick boil. Cover and simmer on low for about 15 minutes.
Step 6:
Uncover, add minced cilantro and stir throughout.
Step 7:
Serve in bowls topped with garnishes of choice
