Homestyle Herbed Potato Soup

Servings: 6

Ingredients:

  • Bacon (6-8 slices) - cooked & crumbled for topping
  • Shredded cheddar cheese for topping

  • 2 tbsp butter

  • 3-4 cloves garlic, minced

  • 3 carrots, peeled and finely chopped

  • 3 celery stalks, finely chopped

  • 3 leeks, finely chopped

  • 4-5 Russet potatoes, peeled and cut into 1in cubes

  • 6 cups chicken stock

  • ½ cup all purpose flour (I use gluten free AP flour)

  • 2 tbps Herban Legend, divided

  • 2 cups whole milk

Homestyle Herbed Potato Soup

Notes* Optional: Use a hand blender to blend a small amount of the soup for added creaminess. Ladle the soup into bowls and top with bacon and cheddar cheese.

Instructions

Step 1:

In a large pot over medium heat, melt butter. Add garlic, carrots, celery, leeks and 1 tbsp Herban Legend. Saute until tender, about 10 minutes. Stir often so as not to burn.

Step 2:

Add the flour and stir for 2 minutes. Add the potatoes, chicken broth and remaining Herban Legend (1 tbsp) and bring to a boil.

Step 3:

Reduce heat to low and simmer, covered, for about 15 minutes. Check the potatoes to make sure they’re fork tender (but still hold their shape) and slowly add the milk while continuing to stir.

Step 4:

Simmer until slightly thickened and potatoes are cooked through.
