Lemon Garlic Chicken and Garlicky Green Beans

Servings: 4

Ingredients:

  • 2 chicken breasts, halved or 4 chicken cutlets
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • ¾ cup heavy cream
  • ¼ cup milk
  • Zest of ½ lemon
  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley for garnish
  • 1 12oz bag of fresh green beans
  • 1 tablespoon butter
  • 2-3 cloves minced garlic
  • Salt & pepper
Lemon Garlic Chicken and Garlicky Green Beans

Instructions

Step 1:
Heat the olive oil in a large skillet over medium heat

Step 2:
Season the chicken cutlets with 1 tablespoon of Bistro Blend. Cook the chicken about 4 minutes per side, until internal temperature is at least 165 degrees

Step 3:
Remove from pan and set aside. Add butter to the pan and lower the heat to low. 

Step 4:
Add the garlic and cook until fragrant (about a minute), then add the cream, lemon zest and lemon juice and simmer 2-3 minutes, stirring until slightly thickened.

Step 5:
Return the chicken to the pan and warm for 1-2 minutes. Garnish with freshly chopped parsley and serve with green beans.

Garlicky Green Beans

Step 1:

Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool.

Step 2:
In a pan over medium heat, add 1 tablespoon of butter. Add green beans and garlic. Toss to coat and let them cook for about 2-3 minutes. Salt and pepper to taste, and serve.
