LouEasyAna Grilled Chicken & Veggies with a Honey Mustard Dressing

Ingredients:
- 1.5–2 lbs chicken breasts or thighs
- 6 tbsp olive oil
- 2 tbsp Lou-Easy-Ana seasoning
- ½ lemon, juiced
- 2 tsp Dijon mustard
- 2 cloves garlic, minced (or ½ tsp garlic powder)
- 1 tsp honey (optional, for caramelization)
For the vegetables:
- 1.5 lbs baby gold potatoes, halved or quartered
- Fresh okra, cut into 1in pieces
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ tbsp Lou-Easy-Ana seasoning
- Pinch of salt
For the Honey Dijon drizzle:
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1–2 tbsp olive oil
- 1 tbsp lemon juice
Notes* Make it a meal! This grilled chicken goes perfectly on top of some roasted vegetables and a tangy honey mustard dressing.
Instructions
Step 1:
Marinate the chicken: Whisk together all marinade ingredients. Add chicken and coat well. Cover and refrigerate for at least 30 minutes, ideally 2–4 hours.
Step 2:
Roast the potatoes: Preheat oven to 425°F. On a sheet pan, toss potatoes with olive oil, garlic, Lou-Easy-Ana, and a pinch of salt. Spread out evenly and roast for 25–30 minutes, flipping halfway through, until golden and crispy.
Step 3:
Grill the chicken: Preheat grill to medium-high heat. Remove chicken from marinade and grill for 5–7 minutes per side (depending on thickness), until cooked through and nicely charred. Let rest for a few minutes, then slice.
Step 4:
Make the drizzle: Whisk together all honey Dijon ingredients until smooth and emulsified.
Step 5:
Serve: Plate the grilled chicken with roasted potatoes and okra and drizzle generously with the honey Dijon sauce.
