Marry Me Chicken Salad
Servings: 4-6
Ingredients:
2 large chicken breasts, cooked and shredded
1 tbsp Little Eataly
1 shallot, finely chopped
¼ cup celery, finely chopped
½ cup mayo
2 tsp Dijon mustard
1tsp white wine vinegar
½ jar julienne-cut sundried tomatoes in oil
¼ cup grated parmesan cheese (fresh is best for this recipe)

Instructions
Step 1:
Put pulled chicken in a large bowl and set aside.
Step 2:
In a separate bowl, combine all other ingredients and mix well.
Step 3:
Add the dressing to the pulled chicken until you reach your desired consistency. You may not use all the dressing.
Step 4:
Serve on a toasted roll topped with spinach or arugula.
