Mini Turkey Loaves

Ingredients:
- 2 Slices White Sandwich Bread,
- Medium-Diced
- 1 Cup Milk
- 2 TBSP Olive Oil
- 3 Stalks Celery, finely chopped
- 1⁄2 Medium Onion, finely chopped
- 1⁄2 tsp Kosher Salt
- 2 lbs Lean Ground Turkey (93%)
- 1 egg
- 2 TBSP Worcestershire Sauce
- 2 TBSP Herban Legend Blend
- 4 Strips of Bacon, cut in half
- *1⁄2 Cup BBQ Sauce
Notes* Heat BBQ Sauce for 30 seconds with a TBSP water. Stir well right before glazing turkey loaves. Alternatively, you can cook this like a traditional meatloaf in a loaf pan and cook for about 45 to 50 minutes. You can add half-strips of bacon across the top of the loaf. If you choose this method, I recommend brushing on glaze a couple of times throughout baking time.
Instructions
Step 1:
Preheat the oven to 350 degrees F.
Step 2:
Soak diced bread in 1 cup milk for about 10 minutes.
Step 3:
While bread soaks, sauté onions and celery for 5 minutes or until onion is translucent and celery softened. Let it cool for about 5 minutes.
Step 4:
Drain milk from bread and squeeze out excess milk from bread with your hands.
Step 5:
In a mixing bowl, add turkey, egg, Worcestershire, Herban Legend, soaked bread, onion and celery.
Step 6:
Mix thoroughly until everything is blended throughout.
Step 7:
Prepare a sheet pan with foil and top with cookie rack.
Step 8:
Lightly roll into about 8 balls and place on cookie sheet.
Step 9:
With a little oil on your hands as you work, shape each ball into oblong shapes. Slightly flatten with the palm of your hand.
Step 10:
Place one strip of bacon on each loaf.
Step 11:
Bake in oven for 25-30 minutes or until turkey meat reaches internal temperature of 165 degrees F.
Step 12:
Pull out of oven and set oven to broil.
Step 13:
Brush on generous amount of BBQ Sauce and cook for an additional 5 minutes or until bacon is crisp.
DO NOT OVERCOOK or turkey will dry out and bacon will burn.
Serve over rice or mashed potatoes.
