Old-Fashioned Candied Yams

Servings: 8-10

 

Ingredients:

  • 4 Large Yams, peeled & cut into 1-2" strips
  • 2 ½ Cups Sugar
  • 1 Cup Water
  • 1 tsp Kosher Salt
  • 2 TBSP Butter

Notes* You will need two skillets for this recipe as the yams need to be in a single row.

Instructions

Step 1:

Follow instructions under Wednesday Work Ahead.

Step 2:

Add yams into both skillets in a single layer. Add 1 ¼ cup sugar to each pan, ½ cup water, 1/2 tsp salt to each skillet.

Step 3:

Bring to a low-simmer (it should bubble) and cook for 10 minutes.

Step 4:

Carefully flip the yams over and cook at a low-simmer for an additional 15-20.

Step 5:

Once the yams are tender, reduce the heat and allow a gentle simmer until water thickens and turns into a thick syrup. Keep an eye on them because the syrup can burn.

Step 6:

Add 1 TBSP butter to each skillet and allow to melt. Shut off heat.
