One Pot Cajun Chicken Pasta

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoon Lou-Easy-Ana seasoning
  • 2 tablespoons olive oil
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 12-16 ounces of pasta (I use Rummo gluten free Penne)
  • 2 cups chicken broth
  • 2 cups whole milk
  • 2 Roma tomatoes, chopped
  • 4 thinly sliced green onions
  • ¼ cup grated parmesan cheese

Instructions

Step 1:
Using a meat mallet, cover the chicken with plastic wrap and pound into ¼ inch thickness. Pat dry with a paper towel and use 1 tbsp Lou-Easy-Ana to season the chicken on both sides.

Step 2:
In a large skillet, heat oil over medium-high heat. Add the chicken and sear until golden brown on both sides and cooked to an internal temperature of 165 degrees, about 4 minutes per side depending on thickness. Once cooked, transfer the chicken to a cutting board and set aside.

Step 3:
Reduce the heat to medium. Add onion and garlic and cook until translucent, about 3 minutes.

Step 4:
Add the uncooked pasta, chicken broth, milk and remaining Lou-easy-ana seasoning (1 tbsp). Bring to a low simmer, add the chopped tomatoes and cook until the liquid is absorbed and creamy and the pasta is cooked, about 12-15 minutes.

Step 5:
Serve the bowls of pasta topped with sliced chicken, sliced green onions and fresh grated Parmesan cheese.
