One-Pot Cajun Tilapia & Rice

Ingredients:
- 4 Tilapia filets, patted-dry
- 1 TBSP Lou-Easy-Ana Seasoning (+ 2 tsp)
- 2 TBSP Butter (Divided)
- 1 TBSP Olive Oil
- 1 1⁄2 Cups Long-Grain Rice
- 1 tsp Kosher Salt
- 1 cup Petite Diced Tomatoes
- 2 1⁄2 Cups Chicken Stock
Notes* *Use a soup pot if you don’t have a skillet with taller sides. **The fish should be cooked all the way through after 3-4 minutes of browning on each side. You can check the thickest part with a knife to ensure it is no longer opaque.
Instructions
Step 1:
Season front and back of filets with 1 TBSP Lou-Easy-Ana.
Step 2:
In a straight-rimmed skillet with lid, melt 1 TBSP butter and olive oil over medium-high heat.
Step 3:
Carefully place filets in pan without touching each other and brown over medium-high heat for 3-4 minutes on each side.
Step 4:
Remove from pan and cover with foil.
Step 5:
Add remaining butter to pan and melt.
Step 6:
Add rice, tomatoes and salt and stir for 2-3 minutes over medium-high heat.
Step 7:
Add stock and remaining Lou-Easy-Ana Seasoning Blend. (Taste to see whether to add 1 or 2 teaspoons).
Step 8:
Bring to a boil while stirring and cover. Decrease heat to low simmer.
Step 9:
Cook for 15 minutes.
Step 10:
Remove lid. Fluff the rice and carefully place filets on top. Cover for five minutes.
Step 11:
Serve immediately.
