Pesto Stuffed Pork Loin

Ingredients:
- 2.75-3 lb Pork Loin
- 1 TBSP Herban Legend Seasoning Blend
- 3 oz Prosciutto Strips (about 6- 8 strips)
- 2 TBSP Extra Virgin Olive Oil
- 1⁄2 TBSP Kosher Salt
Homemade Pesto:
- 2 Cups Parsley, chopped,
- *1⁄4 Cup Fresh Rosemary, chopped
- 2 TBSP Pine Nuts
- 2 Cloves Garlic, smashed
- 1⁄2 Cup Extra Virgin Olive Oil
- 1⁄2 Cup Grated Parmesan Cheese
Instructions
Pesto:
Step 1:
Toss first 4 ingredients in food processor. As it runs, slowly drizzle in olive oil.
Step 2:
Add parmesan cheese and give it a quick final whirl in the processor.
Step 3:
Set aside or make ahead and refrigerate.
Step 1:
Preheat oven to 350 degrees F.
Step 2:
Follow video to learn to butterfly pork loin.
Step 3:
Add 1 TBSP Herban Legend to inside of butterflied loin.
Step 4:
Spread pesto trying to leave 1⁄2 “ space on all sides.
Step 5:
Line with 6 or 7 strips prosciutto.
Step 6:
Gently roll up starting with the short side of loin.
Step 7:
Lightly cover the outside of the loin with 1⁄2 TBSP Kosher Salt
Step 8:
Cover with 2 TBSP Extra-Virgin Olive Oil.
Step 9:
Brown in a sauté pan for about 5-10 minutes.
*In a roasting pan, cook at 350 for about 35 minutes or until thermometer reads 145 degrees
Let rest for 10 minutes. Remove twine and slice into roulades.
