Sausage & Pepper Sandwiches with Zesty Potato Wedges

Servings: 4

Ingredients: 

  • 1.5 tbsp Steak it Easy Seasoning, divided
  • 1 lb smoked sausage
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 white onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup beer (or sub chicken stock)
  • ½ BBQ Sauce
  • 4 hoagie rolls

Zesty Potato Wedges:

 

Step 1:
Slice 4-6 small russet potatoes into wedges.
Step 2:
Toss with olive oil and 1 tbsp Steak it Easy.

Step 3:
Roast in the oven at 400 degrees for 30-35 minutes.

Sausage & Pepper Sandwiches with Zesty Potato Wedges

Instructions

Step 1:

Slice sausage in quarters, lengthwise. Brown on all sides and season with ½ tbsp Steak it Easy. Remove from pot and set aside.

Step 2:

Add olive oil to the pot and saute the sliced bell peppers and onions until soft and slightly caramelized.

Step 3:

Add the garlic and saute until fragrant. Add the tomato paste, beer (or chicken stock if using), BBQ sauce and 1 tbsp Steak it Easy.

Step 4:

Let sauce simmer for about 5 minutes before adding the sausage back to the pepper and onion mixture. Simmer for another 5 minutes.

Step 5:

Toast your hoagie rolls and top with sausage and peppers.

Step 6:
Serve with a side of zesty potato wedges.
