Sausage & Sweet Potato Bake

  • 1⁄4 Cup Extra-Virgin Olive Oil (Divided)
  • 2 Small Sweet Potatoes, thinly sliced into half-moons
  • 1 TBSP Herban Legend Seasoning Blend (Divided)
  • 8 Sweet Italian Pork Sausage Links
  • 1 Cup Chicken Stock
  • 1 15 oz Can Cannellini Beans
  • 1 Bunch Swiss Chard, washed and roughly chopped
Sausage & Sweet Potato Bake


Step 1:

Preheat oven to 450 degrees F. In a 9X13 casserole dish, add about 1 TBSP of olive oil to cover bottom. You may use your hands or a paper towel to smear.

Step 2:

Line the sweet potatoes as close to one layer as possible. Season with 1⁄2 TBSP Herban Legend Seasonings and another TBSP of olive oil.

Step 3:

Top potatoes with sausage links, leaving space between links. Brush remaining olive oil onto links to help brown evenly.

Step 4:

Roast in oven for 20 minutes. Pull out from oven and flip sausage links over.


Step 5:

Add chicken stock, beans, Swiss Chard and remaining Herban Legend Seasonings. Stir mixture well.

Step 6:

Cook for an additional 10-15 minutes or until sausage is cooked through.

Step 7:

Give one final stir. Serve immediately by pulling out a link and topping with stewed potatoes and chard mix.
