Sheet Pan Sausage & Veggies

Ingredients:
- 1 8oz bag of broccoli florets
- 1 16oz package of cubed butternut squash
- 1 onion or shallot, sliced thin
- 1 bell pepper, any color
- 1 tbsp Steak It Easy
- 1lb Kiolbassa smoked sausage
- Steamed white rice, optional

Instructions
Step 1:
Take the veggies you have in your fridge- I used a yellow bell pepper, a bag of broccoli florets, a shallot and a small package of butternut squash. Toss those together in some olive oil and 1TBSP Steak It Easy seasoning.
Step 2:
Spread on a baking sheet and put in the oven at 425 for 35-40 minutes, depending on the vegetables you use.
Step 3:
Slice 1lb of sausage into coins and season with 1TBSP Steak It Easy seasoning. You can use any kind of sausage you have on hand. I always have Kiolbasa smoked sausage in our freezer so that’s what I used!
Step 4:
Spread the sausage out on a parchment-lined baking sheet and add it to the oven when there is 15 minutes left on your veggies.
TIP:
I keep these on separate trays due to the difference in cooking times. The veggies usually take longer than the sausage to cook, so this will keep your sausage from burning.
Step 5:
Once the veggies are cooked through and the sausage is browned, toss them together and serve them over steamed white rice.
