Sheet Pan Sirloin & Potatoes
Servings: 4-6
Ingredients:
- *2 lbs Center Cut Sirloin
- 2 tsp Kosher Salt
- 1 ½ TBSP Steak It Easy
- 8 Medium Yukon Potatoes, cut lengthwise into eighths
- 1 Cup Grape or Cherry Tomatoes, halved lengthwise
- ⅓ Cup Olive Oil (Divided)
- 1 ½ TBSP Steak It Easy
Notes* Should be about 4-6 steaks that are no more than an inch thick. This recipe fed our family of 6 but only 4 servings for hungry teens and adults.
Instructions
Step 1:
Salt steaks with 2 tsp kosher salt about an hour before cooking and bring to room temperature.
Step 2:
Preheat oven to 450 degrees F and season steaks with 1 ½ TBSP Steak It Easy.
Step 3:
In a sheet pan, toss potatoes, tomatoes and all but 2 TBSP oil together with 1 ½ TBSP Steak It Easy. Spread evenly.
Step 4:
Roast in oven for 15 minutes. Stir and roast for about 10 minutes more. Remove from oven.
Step 5:
Switch oven to broil. Bring potatoes closer together in center of sheet pan to create a bed for the steaks.
Step 6:
Pat steaks dry with paper towels and rub in remaining olive oil on both sides.
Step 7:
Place steaks over potatoes and broil on top rack (about 5-6” from broiler) for 5 minutes on one side. Flip and broil for 2-3 minutes for a Medium-Rare to Medium.
Step 8:
Let steaks rest for 5 minutes before slicing against the grain.
Step 9:
Serve over potato and tomato mixture.
