Shredded Flank Steak

Ingredients:
- 1 Onion, roughly-chopped
- *1 Red Bell Pepper, cut into large squares
- 1 Green Bell Pepper, cut into large squares
- 4 TBSP Ketchup
- 1 TBSP Apple Cider Vinegar
- **1 15 oz Can Crushed Tomatoes
- 2 TBSP Latin Nights (Divided)
- 2 lbs Flank Steak
Notes* *You can also small-dice it if you don’t want your kids to know the peppers are in there as they will disintegrate. **You can also use Tomato Sauce.
Instructions
Step 1:
Add vegetables to crock pot.
Step 2:
Add ketchup, vinegar, tomatoes and 1 TBSP Latin Nights Seasoning Blend. Stir.
Step 3:
Season flank steak with 1 TBSP Latin Nights Seasoning.
Step 4:
You may need to slice it into halves to fit into crock pot.
Step 5:
Set on low and cook for 8 hours. Ensure meat is submerged in sauce throughout cooking. (I had to stir it once).
Step 6:
Pull the cooked meat out and shred with two forks over a cutting board. Toss and stir back into the sauce.
Step 7:
Serve over a bowl of white rice.
