Slow Cooker Turkey & Sweet Potato Chili
Ingredients:
- 2 TBSP Olive Oil
- 1 lb Ground Turkey, 93% Lean
- 1 Onion, small-diced
- 2 tsp Kosher Salt
- *2 Medium Sweet Potatoes, peeled and small-diced
- 2 TBSP Texy-Mexy Seasoning Blend (Divided)
- 2 14 oz Cans Black Beans, undrained
- 1 28 oz Can Fire-Roasted Crushed Tomatoes
- 3 Cups Chicken Stock
- **1 TBSP Chipotle Pepper Adobe
Notes* You can also use 16 oz Frozen Sweet Potatoes, defrosted. **You can find in Latin American section of grocery store.
Instructions
Step 1:
In a skillet over medium high heat, crumble and brown turkey.
Step 2:
Add onion and salt. Sauté until onion is translucent and soft.
Step 3:
Add sweet potatoes and 2 TBSP Texy-Mexy.
Step 4:
Add skillet ingredients to slow cooker along with remaining ingredients.
Step 5:
Close lid and cook on high for 4 hours or until sweet potatoes are tender and chili has thickened.
