Stuffed Portabello Mushrooms
Servings: 6
Ingredients:
- 6 Large Portobello Mushroom Caps, destemmed
- 3-4 TBSP Extra-Virgin Olive Oil
- 1 8 oz package cream cheese
- 1 Cup Cheddar Cheese + 1⁄2 Cup
- 1/2 Cup Bread Crumbs
- 1 10 oz packet frozen spinach, defrosted and drained
- 1 TBSP Herban Legend Blend + 1 tsp
Instructions
Step 1:
Preheat the oven to 400 degrees F. Wipe mushrooms with damp paper towel & lay stem-side on cooking sheet with olive oil drizzled on both sides. Cook for 8-10 minutes.
Step 2:
In a bowl, thoroughly mix cream cheese, spinach, cheddar, bread crumbs, & 1 TBSP of Herban Legends.
Step 3:
Remove mushrooms from oven & wipe down with paper towels as they will release moisture. Flip stem-side up.
Step 4:
Top each mushroom cap with about 2 TBSP spinach mix. and remaining cheese.
Step 5:
Cook in oven for 12-15 minutes or until cheese is melted and bubbly. Sprinkle all mushroom caps with 1 tsp Herban Legend before serving.
