Taco Pie

Ingredients:

  • 1lb ground beef
  • 1 jalapeno, deseeded and diced
  • 2 roma tomatoes, chopped (or 1 can diced tomatoes)
  • ½ onion
  • 2 cloves garlic
  • 1 can pinto beans, drained
  • 2 tbsp Texy Mexy
  • 1 cup beef broth
  • 1 box of corn bread mix- I use King Arthur gluten free

Instructions

Step 1:

Make your cornbread mix according to its instructions and set aside, do not bake yet!

Step 2:

In a deep skillet or oven-safe pot on medium-high heat, brown your ground beef. Drain if necessary. Add jalapeno, onion, garlic, tomatoes, beans and Texy Mexy seasoning.

Step 3:

Cook until the veggies are tender and ground beef is cooked through.

Step 4:

Add 1 cup beef broth and simmer for 3-5 minutes.

Step 5:

Now add your uncooked cornbread mix on top of your taco meat and spread it out evenly over the top of the taco meat.

Step 6:

Bake according to the cornbread instructions.

Step 7:

Garnish with shredded lettuce, cheese and sour cream.
