Texy-Mexy Skillet Rice

Ingredients:

  • 1 lb Lean Ground Beef
  • 1 Small Onion, small-diced
  • 1 tsp Kosher Salt
  • 1 Poblano Pepper, deseeded & small-diced
  • 1 15 oz. Can Petite-Diced Tomatoes, undrained
  • 1 TBSP Texy-Mexy Seasoning Blend
  • 1 1⁄2 Cups Instant Rice
  • 1 1⁄2 Cups Chicken Stock
  • 8 oz Shredded Cheddar Cheese
Texy-Mexy Skillet Rice

Instructions

Step 1:

In a large skillet, brown the meat while breaking it up.

Step 2:

When it is almost cooked through, add the onions, pepper and salt.

Step 3:

Cook until onion is translucent.

Step 4:

Add canned tomatoes, Texy-Mexy Seasoning and cook for 2-3 minutes.

Step 5:

Add rice and stir throughout. Add chicken stock.

Step 6:

Cover and simmer for 10 minutes.

Step 7:

Remove lid and add cheese. Shut off heat and allow to rest for a few minutes before serving.
