Thai-inspired Yellow Chicken Curry

Ingredients:
- 2 chicken breasts (uncooked), sliced into very thin strips
- 2 medium-sized russet potatoes, cubed
- 1 white onion, chopped
- 2 tbsp Thai red curry paste
- 2 tbsp Suburban Curry seasoning
- 1 tbsp lemongrass paste
- 1 can coconut milk (full fat for flavor)
- 2 tsp tamari sauce
- ⅓ cup fresh cilantro (more if desired for topping)
- Juice and zest from 1 lime

Notes* For toppings: chopped fresh cilantro, chopped peanuts, lime wedges
Instructions
Step 1:
Heat the oil in a large skillet over medium-high heat.
Step 2:
Add the onion and potatoes. Cook 10 minutes, until soft.
Step 3:
Add the chicken, curry paste, Suburban Curry and lemongrass paste. Toss to coat the chicken, then cook 3 minutes.
Step 4:
Pour in the coconut milk. Add ¼-½ cup of water if needed, depending on preferred consistency.
Step 5:
Cover and cook for 5-10 minutes until the chicken is cooked through and the sauce thickens.
Step 6:
Remove the curry from the heat. Stir in tamari, cilantro and lime juice and zest. .
Step 7:
Top with fresh cilantro, peanuts and lime
