Turkey Tot Casserole

Servings: 8




  • 2 lb Lean Ground Turkey
  • 1 Onion, small-diced
  • 3 TBSP Tomato Paste
  • 1 14 oz Can Black beans, drained
  • 2 TBSP Texy Mexy Blend
  • 32 oz Frozen Tater Tots
  • 16 oz Shredded Cheddar Cheese
  • Green onions optional

Enchilada Sauce (optional):

3 T Olive Oil

3 T Masa Harina

3 T Texy-Mexy

1 T tomato paste

2 c chicken stock



  1. If making enchilada sauce,  add oil and masa harina to small sauce pot and cook, while whisking, over medium heat for 1-2 minutes. 
  2. When bubbling, add tomato paste and stir. 
  3. Add chicken stock and Texy-Mexy Seasoning. 
  4. Bring to a quick boil.
  5. Lower heat & simmer until it thickens (about 2-3 minutes)

Step 1: 

Preheat oven to 350 degrees F.
Step 2: 

For the casserole brown turkey meat.
Step 3: 

Add onion & Texy Mexy Blend & cook until onion is translucent.
Step 4: 

Add tomato paste and black beans.
Step 5: 

Toss half frozen tater tots & half cheese with the meat.

Step 6: 

In a 9x11 pan, pour half enchilada sauce. Add tater tot/ meat mixture. Press down slightly.
Step 7: 

Add remaining tots & cheese & drizzle with sauce.
Step 8: 

Cook for 40 minutes.
