White Bean Chicken Chili

Servings: 6

 

Ingredients:

  • 1 TBSP Extra-Virgin Olive Oil
  • 1 Onion, small-diced
  • 1/2 tsp salt
  • 1 Green Bell Pepper, small-diced
  • 1 Jalapeño, seeded and minced
  • 2 cups Chicken, shredded
  • 2 Tablespoons Latin Nights Seasoning Blend
  • 1 14 oz Cans White Beans/Chickpeas, drained
  • 4 cups (32 oz) Chicken Stock

Garnish:

  • Shredded cheese
  • Sour Cream
  • Avocado
  • Tortilla chips
White Bean Chicken Chili

Instructions

Step 1:

In a soup pot, sauté onion in olive oil with salt until soft and translucent.

Step 2:

Add peppers and sauté for 2-3 minutes.

Step 3:

Add chicken and 2 TBSP of Latin Nights Blend. Stir.

Step 4:

Add beans and chicken stock and bring to a quick boil.

Step 5:

Partially cover with lid, reduce heat to low and cook for 15 minutes.

Step 6:

Top with avocado, shredded cheese and sour cream and serve with a side of tortilla chips.
