White Bean Chicken Chili
Servings: 6
Ingredients:
- 1 TBSP Extra-Virgin Olive Oil
- 1 Onion, small-diced
- 1/2 tsp salt
- 1 Green Bell Pepper, small-diced
- 1 Jalapeño, seeded and minced
- 2 cups Chicken, shredded
- 2 Tablespoons Latin Nights Seasoning Blend
- 1 14 oz Cans White Beans/Chickpeas, drained
- 4 cups (32 oz) Chicken Stock
Garnish:
- Shredded cheese
- Sour Cream
- Avocado
- Tortilla chips
Instructions
Step 1:
In a soup pot, sauté onion in olive oil with salt until soft and translucent.
Step 2:
Add peppers and sauté for 2-3 minutes.
Step 3:
Add chicken and 2 TBSP of Latin Nights Blend. Stir.
Step 4:
Add beans and chicken stock and bring to a quick boil.
Step 5:
Partially cover with lid, reduce heat to low and cook for 15 minutes.
Step 6:
Top with avocado, shredded cheese and sour cream and serve with a side of tortilla chips.
