Bistro Stuffed Chicken with Feta & Basil
Servings: 4
2-3 TBSP Bistro Blend (applied both inside and outside of chicken breasts)
4 chicken breasts
1 package of bacon
Basil leaves, (about 20 leaves) thinly sliced. To create basil ribbons easily, stack several leaves on top of each other, roll them up and slice horizontally.
4 cloves of garlic, minced
1 shallot, finely diced
1 package of crumbled feta
Toothpicks

Instructions
Step 1:
Preheat oven to 375. Place a cooling rack on a sheet pan and spray with olive oil (to raise the chicken while cooking)
Step 2:
Butterfly the chicken breasts (Slice the chicken breasts 3/4 of the way through and open it creating large flat chicken breast)
Step 3:
Liberally season the inside of the opened chicken breast with Bistro Blend.
Step 4:
Add 1/4 of the shallot, garlic, basil, and feta on one side of the chicken breast and then fold over the other half and repeat.
Step 5:
Wrap 2-3 slices of bacon on each chicken breast and use toothpicks to secure the bacon
Step 6:
Liberally apply bistro blend to each side of the bacon-wrapped chicken breasts and place on sheet pan.
Step 7:
Bake at 375 until chicken reaches 165 and the bacon is crisp. (About 30-40 minutes depending on how large the chicken breasts are).
