Marry Me Chicken Meatballs & Pasta

Servings: 4

Ingredients:

  • 1 tbsp Little Eataly seasoning
  • 15-20 pre-made chicken meatballs (I use Amylu Basil and Parmesan chicken meatballs)

  • ½ Onion 

  • 3 Cloves garlic, minced

  • ½ Jar sun-dried tomatoes, roughly chopped

  • 1 tbsp tomato paste=

  • 1 Cup chicken stock

  • 1 Cup half & half

  • 1 lb pasta (I use Rummo gluten free Rigatoni)

  • 1 Handful fresh spinach

Marry Me Chicken Meatballs & Pasta

Instructions

Step 1:

Boil pasta according to directions on package. Drain and set aside.

Step 2:

In a large pot, add some olive oil and brown your meatballs on all sides until cooked through.

Step 3:

Remove from the pot and set aside. In the same pot, add more olive oil and saute the onion and garlic until translucent.

Step 4:

Add tomato paste and sun-dried tomatoes and mix well. 

Step 5:

Add the chicken stock, half and half and Little Eataly seasoning. Simmer on low heat for 3-5 minutes. 

Step 6:

Return the meatballs and cooked pasta to your pot with the sauce and mix it all together. 

Step 7:

Top each bowl with fresh grated parmesan. I like to add extra parmesan to the sauce in the pot as well!
