Spinach & Ricotta Stuffed Pork Loin

Ingredients:
- 2.5lb pork loin (trim off silver skin if any)
- 1 shallot
- 1cup ricotta
- 1cup chopped spinach
- 2-3 cloves garlic
- 1/2 tbsp Little Eataly
- 1/4-1/2 cup grated parm, depending on preference

Instructions
Step 1:
Preheat oven to 425 degrees.
Make the filling: combine the shallot, ricotta, chopped spinach, garlic and Little Eataly in a bowl and mix well.
Step 2:
Butterfly the pork loin and sprinkle the inside with 1tbsp Little Eataly.
Step 3:
Spread stuffing mixture onto the seasoned pork loin.
Step 4:
Roll up and tie the butterflied pork loin together with twine.
Step 5:
Sprinkle ½ tbsp Little Eataly on the outside of the pork.
Step 6:
Place on a baking sheet and bake at 425 for 15 minutes. After 15 minutes, reduce the temperature to 375 and cook for 30-45 minutes, until the internal temperature of the pork is 155 degrees (45mins-1hr total cook time).
Step 7:
Remove from the oven and let rest for 5-10 minutes before slicing.
Step 8:
Serve with garlic green beans and mashed potatoes.
