Sweet Potato Taco Bowls

Ingredients:
- 1lb ground beef or turkey
- 2 tbsp Texy Mexy
- 1 onion, diced
- 1 jalapeno, diced
- 2 sweet potatoes, peeled and cubed
- Cottage cheese
- Avocado
- Hot honey, optional

Instructions
Step 1:
Cut the sweet potatoes into 1 inch cubes and bake for 15 minutes until fork tender and starting to brown on the outside.
Step 2:
Saute the diced onion and jalapeno until softened, add the ground beef and season with 2 tbsp Texy Mexy. Brown the ground beef until cooked through.
Step 3:
To assemble the bowls, top the sweet potatoes with taco meat, a scoop of cottage cheese, sliced avocado and a drizzle of hot honey. It may sound like a strange combo—but trust me, that spicy-sweet kick brings the whole dish together!
